Ingredients to make Shrimp with Coconut Milk:

  •  1 kilogram of shrimp

  •  200 grams of coconut milk or cream

  •  4 tablespoons of tomato sauce

  •  1 tablespoon of curry

  •  1 teaspoon powdered ginger

  •  1 chopped onion

  •  1 drizzle of olive oil

  •  1 lemon

  •  1 handful of parsley or chopped parsley

How to make shrimp with coconut milk:

Clean the prawns by removing the heads and shells and rinse - reserve this waste to prepare, for example, a prawn broth . Heat a frying pan with a little olive oil over medium heat and, when hot, sauté the prawns for 2-3 minutes , until they change color.

Tip: You can also buy frozen peeled prawns, just let them thaw and they are ready to use.

Remove the prawns from the pan, so they don't overcook, and start preparing the sauce : add the onion to the same pan and add a little more oil.

Let the onion sauté until transparent and then add the tomato sauce and coconut milk . Mix, lower the heat and leave for 1-2 minutes.

Tip: If you don't like coconut milk, you can use cream instead.

Then put the curry , stir and also put the ginger , stirring again. Taste this curry sauce and, if you prefer a more intense flavor, add a little more of these spices.

To harmonize the flavors also add a few drops of lemon juice and a pinch of salt.

Return the prawns to the skillet and cook together for 2-3 minutes over medium-low heat, so as not to boil (this would cause the sauce to curdle).
